Bar COA
The name COA (pronounced "co-ah") refers to the machete-like tool used for harvesting agave plants. The bar is inspired by the drinking dens Jay frequented on his trips to Mexico. A real COA, hand-carried from Oaxaca, is embedded into the bar's wall as a symbol of craftsmanship.
COA features a beautifully curated cocktail list inspired by the flavours of Mexico. The team introduces a new cocktail every week based on seasonal ingredients. The bar also boasts a remarkable 41-page agave spirit menu, categorised by the species of agave. COA argues that agave spirits are the most terroir-driven spirits in the world, similar to wine, with variety, soil, micro-climate, and human factors all affecting the final product. In addition to tequila and mezcal, the bar offers other Mexican spirits such as Raicilla, Bacanora, Sotol, and Charanda.
