Island Shangri-La Hotel, Petrus Restaurant
Chef Uwe Opocensky is Executive Chef of Island Shangri-La, Hong Kong, a role he has held since October 2019. He leads a brigade of over 120 chefs across seven restaurants and bars, including the two-Michelin-starred Restaurant Petrus and one-Michelin-starred Summer Palace.
A champion of classical technique and modern precision, Chef Uwe has maintained Petrus’s Michelin star annually from 2020 to 2025. He has revived guéridon service (tableside flambéing and carving) while focusing on hyper-seasonal, traceable ingredients. Sustainability is central to his leadership—he eliminated single-use plastics in 2020, introduced urban farming with composted coffee grounds, and implemented closed-loop waste management.
