Chef Joris Rousseau is the Executive Chef of Feuille, a contemporary French restaurant in Hong Kong. Born and raised in Paris, he chose culinary school over a rugby career. He trained at Michelin-starred restaurants under chefs Guy Martin and Yannick Alleno, cooked globally, and worked for actor Gérard Depardieu.
Before opening Feuille, he spent five months in Paris with consultant chef David Toutain. His nature‑inspired cooking combines tradition with modern influences, with a strong commitment to sustainability — at least 85% of Feuille's ingredients are locally or regionally sourced.
