Founder Salvatore Fiata comes from three generations of pizza makers. His tagline is “75% moisture, 510 degrees Celsius, 90 seconds and 100% passion.” Every ingredient, from San Marzano tomatoes to DOP Parmigiano and heritage wheat, is sourced directly from Italy. The dough follows strict Neapolitan rules, and Salvatore even filters Hong Kong water to get as close as possible to the taste of home. The result is a pizza that feels transported straight from Naples: tender, blistered, aromatic, and impossibly flavourful.
