Bar Penicillin
Penicillin is a pioneering cocktail bar in Central, Hong Kong, with a singular mission: to become the city's first truly "scrap-less" bar — one that produces minimal waste by the end of the night. Founded by Agung and Laura Prabowo and their dedicated team, Penicillin channels endless creativity into transforming common waste and kitchen by-products into something new and delicious.
The bar operates on a closed-loop, sustainable model where nothing is simply thrown away. Ingredients are upcycled, recycled, and re-used in cocktails. The team self-breeds ferments, brews its own alcohol, and grows ingredients in-house. Every element is part of a circular system designed to eliminate waste.
