Chef Angelo Aglianó is the Director of Tosca di Angelo, the one-Michelin-starred Italian restaurant at The Ritz-Carlton, Hong Kong. Growing up in Sicily, he learned to cook by fishing with his father, a professional fisherman. He worked closely with Joël Robuchon for years, helping open Robuchon's Hong Kong and Taipei restaurants, where the Hong Kong location earned three Michelin stars. He joined The Ritz-Carlton, Hong Kong in 2019. His philosophy: stay true to traditional Italian recipes while translating them into elegant fine dining.
