Chef Palash Mitra is Culinary Director of South Asian Cuisines at Black Sheep Restaurants in Hong Kong, overseeing four restaurants including New Punjab Club, which earned a MICHELIN Star in 2019 — the first ever for a Punjabi restaurant. Growing up in eastern India, he learned to cook from his mother and grandmother. He built his reputation in London at Michelin-starred Gymkhana and other top kitchens before returning to authentic South Asian cooking. Unlike westernising Indian fare, he focuses on honouring tradition.
