Chef Kenichi Fujimoto is the Head Chef of Sushi Saito at Four Seasons Hotel Hong Kong, which earned two Michelin stars within its first year. He began his career in hairdressing before discovering sushi at 22. At 27, he joined Sushi Kanesaka in Ginza under master Shinji Kanesaka, then moved to Macau where his restaurant earned a Michelin star in its first year. After five years with Kanesaka, he worked alongside three-Michelin-starred chef Takashi Saito and later became head chef of Sushi Saito in Hong Kong. Known for his warm, friendly demeanor, Fujimoto learned Chinese and English to connect with a diverse range of patrons.
