藤本健一是香港四季酒店寿司斋藤的总厨,该酒店在第一年就获得了两颗米其林星。 在22岁发现寿司之前,他开始了他的美发生涯。 27岁的他在银座加入了寿司Kanesaka,然后搬到澳门,在那里他的餐厅在第一年就获得了米其林星。 在Kanesaka工作五年后,他与米其林三星级厨师Takashi Saito一起工作,后来成为香港寿司Saito的总厨。 藤本以热情友好的举止着称,他学会了汉语和英语,与各种各样的顾客建立了联系。
