Loïc Portalier
Chef Loïc Portalier is the Executive Chef of Louise (one Michelin star) and La Terrace by Louise in Hong Kong. At just 28 years old, he assumed the role of Head Chef at Claudine in Singapore from 2021 to 2024, a restaurant under the guidance of acclaimed Chef Julien Royer.
Loïc's culinary journey includes positions at prestigious three-Michelin-starred establishments such as Epicure at Le Bristol Paris (Eric Frechon), Restaurant Paul Bocuse (Paul Bocuse), and Restaurant Le Clos des Cîmes (Regis Marcon), as well as Belon by Daniel Calvert. He previously served as Sous Chef at Louise in 2019 under Chef Julien Royer and Chef Franckelie Laloum.
His creative vision blends strong French cooking techniques with a modern twist, while prioritizing genuine hospitality. At Louise, he spearheads a fresh culinary concept celebrating the sociable nature of French cuisine, presenting it in a stripped-down yet delightfully flavorful essence.
