Mitsuru Konishi
Chef Mitsuru Konishi is the Executive Chef of Plaisance by Mauro Colagreco in Hong Kong, which earned its first Michelin star in 2025 under his leadership.
Born and raised in Okayama, Japan, Chef Konishi discovered his passion for cooking at 18 and joined the two-Michelin-starred L'ATELIER de Joël Robuchon in Tokyo. He then moved to France for seven years, working at Michelin-starred restaurants including Michel Rostang, L'Hôtel de Carantec, and Taillevent — where he became the first ever Japanese Sous Chef since the restaurant opened in 1946.
In 2013, he joined Hong Kong's Lai Sun Dining and earned two Michelin stars (2014–2016) for Wagyu Takumi. In August 2015, he was honoured by the Consul General of France as a Chevalier dans l'Ordre National du Mérite (Knight of the National Order of Merit). In 2024, Chef Mauro Colagreco appointed him Executive Chef of Plaisance, which earned its first Michelin star in 2025.
