Shun Sato
Chef Shun Sato is the creative force behind CENSU CREW, a restaurant group based in Hong Kong and Tokyo. Rather than pursuing perfection, Shun is drawn to imperfection and perpetual transformation — a philosophy rooted in wabi-sabi.
Growing up in Sendai, Japan, he assisted at his father's two izakayas but felt a spark of rebellion, longing to reinvent traditional culinary norms. With 18 years of experience across Japan, Australia, and Hong Kong — including training in French fine dining techniques — he creates dishes known for consistency, complexity, and exceptional quality, elevating them beyond traditional izakaya fare.
In 2021, he launched CENSU HK, followed by ENISHI (2023), CENSU TOKYO (2023), and GOLDEN GIP, a Korean-Asian restaurant.
