Ricardo Chaneton
Chef Ricardo Chaneton is the chef-owner of MONO, a modern Latin American restaurant that has earned one Michelin star (2022–2025), ranked No. 24 on Asia's 50 Best Restaurants 2025, and made him the first Venezuelan chef-owner to receive these distinctions.
A multilingual native of Venezuela, Ricardo originally set out for a career in medicine — but a summer job in a restaurant changed his destiny. His journey with French cuisine led him to Europe, where he worked at the 3-Michelin-starred Quique Dacosta in Spain. In 2010, he joined 3-Michelin-starred Mirazur (currently No. 1 on The World's 50 Best Restaurants), working his way up from chef de partie to chef de cuisine in seven years under chef Mauro Colagreco.
In 2016, Ricardo became Executive Chef of Petrus at Island Shangri-La at age 28. He later opened MONO, where he distills Latin America's complex culinary heritage using his mastery of French fine dining.
