Tam Tung
Chef Tam is the award-winning Executive Head Chef of Yat Tung Heen, where he has held a Michelin One-star recognition since 2017 — receiving his tenth star in 2026.
With over 30 years of culinary experience, Chef Tam arrived in Hong Kong from Guangdong as a training cook, working his way up through apprenticeships and years of dedication. He earned early recognition with the Gold Award for Chinese Cuisine at the Hong Kong Food Festival Culinary Awards in 1990.
While his approach to fine dining emphasizes quality ingredients and refined techniques, he never forgets Cantonese tradition. He proudly showcases his Taishan roots in signature dishes like Mandarin Peel Chicken, which uses the region's famous dried mandarin peel to elevate the dish's fragrance.
