Antimo Maria Merone is a Chef-owner of Estro – a one-Michelin-starred restaurant in Hong Kong (2023–2025) and #32 on Asia's 50 Best Restaurants 2025. A Naples native from a farming family, he trained at Berlin's Vai Mó and ALMA in Parma under Gualtiero Marchesi. In Asia, he opened L'Altro (Michelin star) and spent six years as Executive Chef at Umberto Bombana's 8½ Otto e Mezzo in Macau (Michelin star). He opened Estro in 2021, elevating Neapolitan cuisine with modern techniques, drawing on memories of his homeland, ancestors, and childhood.
