Chef Agustin Ferrando Balbi is the culinary force behind one-Michelin-starred Ando in Hong Kong. Raised in a Spanish-Italian family, his love for food began at his grandmother's table. Instead of Europe, he moved to Japan — without knowing Japanese — training at three-Michelin-starred Nihonryori Ryugin and two-Michelin-starred Zurriola. In 2015, he was named a top 10 young chef in Japan. Moving to Hong Kong in 2016, he led HAKU before opening Ando with JIA Group. Ando earned its Michelin star in 2021 and ranks #37 on Asia's 50 Best Restaurants 2024. Agustin was named Best Young Talent of the World 2019 by La Liste.
