Chef Jim Löfdahl is the founder of Embla, a contemporary Nordic fine dining restaurant in Hong Kong (opened 2022). The name honors both Norse mythology and his first-born daughter. He previously served as Executive Chef at Frantzén's Kitchen, where he helped earn two Michelin stars working under Chef Björn Frantzén. At Embla, he follows the New Nordic Cuisine movement — using local, natural, and seasonal produce — with a menu that reflects the changing seasons of the Nordic regions.
