Saito Chau

Chef Saito Chau is the Culinary Director of Chinesology, bringing nearly 30 years of experience to one of Hong Kong's most innovative modern Chinese kitchens. He has led acclaimed restaurants including John Anthony, Dim Sum Library, and Hutong.
Starting his culinary journey at just 15, Chef Saito became a Head Chef by age 20. He credits his grandmother for inspiring his lifelong dedication to Chinese cuisine. In 2016, he graduated from the Hong Kong Chinese Culinary Institute's Master Class and has since contributed to industry lectures and consultancy.
His innovative approach was recently recognized with the prestigious Black Pearl One-Diamond Award, affirming his leadership in shaping the future of Chinese fine dining.
