Junior Nadje
Chef Junior Nadje is the Executive Chef of Mandarin Grill + Bar at Mandarin Oriental, Hong Kong, leading a new era for one of the city's most recognised dining rooms.
Born in Paris to parents from the Ivory Coast, Chef Nadje discovered his fascination with food as a child watching his Italian aunt make pasta by hand. He began his career in Paris before moving through the Michelin landscape of Monaco, London, and Dubai. He trained under acclaimed chefs including Yannick Alléno, Marcel Ravin, and Mathieu Viannay, working at celebrated restaurants such as La Chèvre d'Or, Blue Bay, STAY by Yannick Alléno, and Rue Royale by Mathieu Viannay. Most recently, he served as Chef de Cuisine Adjoint at Alléno Paris, the three-Michelin-star flagship of chef Yannick Alléno.
During his decade in Dubai, he also launched Dîner Moderne, a private dining and consulting concept that brought his contemporary French cooking to Lebanon, Saudi Arabia, Côte d'Ivoire, and Greece.
