Chef Marc Mantovani is the Head Chef of Cristal Room by Anne-Sophie Pic in Hong Kong, a collaboration between chef Anne-Sophie Pic, Baccarat, and Leading Nation Hospitality (opened November 2023).

Hailing from Romans-sur-Isère in France, Marc began his culinary journey with an apprenticeship in Avignon, where he developed a deep appreciation for old-school French cooking. At age 20, he joined Anne-Sophie Pic's culinary team as a commis at her brasserie, André. He rose through the ranks to become Head Chef, fully embracing Pic's celebrated dining philosophy of "Suffusion" — the art of infusing ingredients and flavours.

Eager for new challenges, Marc ventured to London to lead the two-Michelin-starred La Dame de Pic before moving to Hong Kong in November 2022. His journey within the Pic culinary realm is not merely a tale of learning techniques, but a testament to his commitment to embodying the artistic vision behind Anne-Sophie Pic's remarkable legacy.
